Important Notes & Tips:
• Brush your loaf pan with butter and lined with baking paper with a little extension of about half an inch on both sides. This will you later to pull-out the baked loaf easily once cooked.
• Make sure that your eggs, yogurt, and butter are in room temperature
• You can replace yogurt with buttermilk or sour cream
• If coconut sugar is not available, regular dark brown sugar will be okay to use
Yield: 1 Large Loaf or 2 Smaller Loaves
Ingredients:
• 1½ cups all-purpose flour
• 1¼ teaspoons baking soda
• ¾ teaspoon fine salt
• 1 cup coconut sugar
• ⅓ cup yogurt, or sour cream
• ¼ cup unsalted butter, room temperature
• 2 large eggs
• 4 large overripe bananas, mashed (about 1½ cups)
• 1 shot of good espresso, room temperature + 2 teaspoons of instant coffee (mixed in the espresso while still hot to dissolve)
Instructions:
• Combine the flour, baking soda, and salt in a medium bowl. Whisk until well blended.
• Using an electric mixer on medium-high speed, beat coconut sugar, yogurt, and butter in a large bowl until light and fluffy, about 4-6 minutes. Add eggs one at a time, beating to blend after each addition. Make sure to scrape down the sides and bottom of the bowl to make sure that ingredients are well incorporated.
• Change the speed to the lowest setting, then add the flour mixture, and mix until just combined. Add bananas and the espresso and mix lightly just using a rubber spatula. Do not overmix. Scrape batter into prepared pan.
• Bake the loaf in a pre-heated oven (170 degrees Celcius) for about 60–65 minutes or until a tester inserted into the center comes out clean. Transfer pan to a wire rack and let it cool. Enjoy!
